Why Dallas?

There’s a question I often get from guests:“Why did you come to Dallas?”

It’s a fair question.New York had been my home for many years.My restaurant, Omakase Room by Tatsu, was always fully booked, full of energy, and every day felt deeply fulfilling.I never imagined leaving.

But one day, everything began with a subtle feeling—something small that didn’t sit right.

After each night of service, my wife Hiroko and I would sit down together and write notes about our guests—names, anniversaries, allergies, conversations... It was like a diary of memories, a way to honor and remember every person who sat at our counter.

One evening, Hiroko said,“Lately, I feel like we’ve had a lot of guests from Texas.”

That caught our attention.So, we decided to check the area codes on the phone numbers we had noted.To our surprise, 30% were from Texas.

We were shocked.And curious.So in October 2019, we took our first trip to Dallas.

Honestly, we had no idea what to expect.But the moment we arrived, something about the city captivated us.

The streets were clean and spacious, the weather was gentle, and above all, the people were kind and open.Their way of communicating was warm—different from New York, but in a good way.

As we walked the city, visited restaurants, and talked to locals, I realized something important:The Edomae-style sushi I had dedicated my life to was still unfamiliar to most people here.

That realization sparked something inside me.This wasn’t just a new location for a restaurant—It was a chance to share something meaningful with people who hadn’t yet experienced it.

A chance not just to serve sushi,But to introduce what sushi could truly be.

Looking down at the city from the plane window on our flight back to New York, our minds were already made up.

“Let’s go to Texas.”

なぜダラス？

お客様によく聞かれる質問があります。「なぜダラスに来たの？」

たしかに、もっともな疑問です。ニューヨークは自分にとって長年のホームでした。自分の店「Omakase Room by Tatsu」は常に満席で、活気に満ちていて、毎日が充実していました。

でも、ある日、ちょっとした違和感から物語が始まります。

営業が終わったあと、毎晩、妻の寛子と一緒にお客様の記録をつけていました。名前、記念日、アレルギー、会話の内容……いわば、お客様との思い出を綴る日記のようなものです。ある時、寛子がふと気づきました。「最近、テキサスから来たというお客様が多いような気がする...」と。

気になって電話番号の市外局番を調べてみると、なんと全体の30％がテキサスからのお客様だったのです。

私たちは驚きました。

「一度行ってみよう」と思い、2019年10月、初めてダラスを訪れました。正直、どんな街なのかまったく知りませんでした。でも到着してすぐに、その空気に心を奪われました。

街は清潔で広々としていて、気候も穏やか。何より、人がとても親切で、オープンでした。ニューヨークとはまた違う、温かいコミュニケーションの仕方がそこにはありました。

いくつかレストランをまわり、街を歩き、色々な人に話を聞くうちに気づいたことがあります。自分が大切にしてきた江戸前寿司というスタイルが、まだこの街では新しいものだったということです。そこに、可能性を感じました。

ただ店を開くのではなく、自分が大切にしてきたものを、まだ知らない人たちに伝えられる場所。そんなチャンスがここにはあるかもしれない――。

帰りの飛行機の窓から街を見下ろしながら、私たちの心の中ではもう決めていました。
